Quick and Easy Pumpkin Breakfast Bars

These bars are healthy, delicious and so easy to make, and it's a one bowl Pumpkin Bars. We all know what that means, less to clean and who doesn't love that! I love making them the night before and eat them cold or warm in the morning. I also, love serving them warm straight from the oven with banana nicecream or you can use any ice-cream you prefer. The combo it's so good! It's a perfect breakfast or snack: They taste like sweet, spiced pumpkin cake.


Makes 4 big squares

Prep time: 5 min

Baked time: 35 min

Total time: 40 min


Wet Ingredients:
  • 1 ripe mashed banana

  • 1 cup hemp milk or any plant milk (see below for quick hemp milk recipe)

  • 1/3 cup maple syrup

Dry Ingredients:

Direction:
  1. Preheat the oven to 350F.

  2. Place all the wet ingredients into a square glass baking tray 8x8 inches. Mash the banana first then add all the wet ingredients mix until well combined and then add the dry ingredients into the wet and mix well. Smooth it out the mixture before baking.

  3. Feel free to add 1/4 cup chocolate chips to the bars before baking if you wish. OPTIONAL.

  4. Place the baking tray in the oven and bake at 350F for 35 min. Once done you can serve it right away with banana nicecream or let them cool down completely. Keep in mind if you serve it right away they will be very soft but delicious. Store them in the fridge for up to 5 days.

Tips;

To make quick hemp milk all you need is a blender 2 cups water, 1/2 cup hemp seeds blend until smooth. you can strain it or use it as is. You can add pitted date to sweeten and 1 tsp vanilla extract. I personally do not strain it. There is a good amount of omega 3s in the seeds. If you prefer more flavor in your milk you can add vanilla extract and honey or maple syrup to taste.


Pumpkin spice recipe

I recommend to double or triple the recipe so you have it for later and enough for the bars.

2 tsp cinnamon powder

1/2 tsp nutmeg powder

1/2 tsp ginger powder

1/4 tsp cloves powder
