Lemon Coconut Truffles

Ingredients:

Wet

  • 3 tbsp honey liquid

  • 4 tbsp coconut oil solid but melted

  • 3 tbsp lemon juiced zest of the whole lemon

  • 1 tsp vanilla extract

Dry

  • 3/4 cup almond flour 1/2 cup coconut flour

  • 1/8 tsp turmeric

  • pinch of salt

  • 1/2 cup of shredded coconut for rolling the truffles (set a side)

Direction:

  1. In the bowl combine the wet ingredients first, mix well.

  2. Add the dry ingredients. Mix well, the dough will become thick, that's what you want.

  3. Place the dough in the freezer for 15 min or fridge for 30 min to harden a little.

  4. Remove the dough and use 1 tsp of dough and roll into a ball. They will be small, it yields 22 balls.

  5. In the bowl place shredded coconut and roll the balls to cover the surface, this is optional but it makes it look pretty and it adds texture and deliciousness.

  6. Store them in the freezer for up to a month if they last.
