Vegan Omelette - Delicious, Fluffy and Easy to Make

This delicious omelette will satisfy anyone. It’s gluten, soy, and nut-free and it is made from chickpea flour. It’s full of amazing flavour, fibre, protein and tons of nutrients. What I love about this meal is that it can be served for lunch or dinner. You can add any of your favourite veggies to the filling and you can use any sauce you like such as tomato or cheese sauce or just omit all. We love pesto as it adds amazing flavour to the omelette.

  • 1 cup chickpea flour

  • 1 tsp baking powder

  • 1/2 tsp salt or less

  • 1/2 tsp black pepper

  • 1/2 tsp turmeric

  • 1/2 cup can coconut milk

  • 1 cup water

  • 1 green onion chopped thinly (optional)

  • 2 strings of fresh parsley chopped thinly (optional)

For the filling:

  • 1/2 red onion chopped

  • 2 garlic cloves minced

  • 1 red pepper chopped

  • 2 cups cremini sliced (227g)

  • Salt, pepper to taste

  • 2 cups fresh spinach


  1. In a medium bowl whisk chickpea flour, baking powder, salt, paper, turmeric, then add coconut cream and water. Whisk until well combined, smooth with no lumps. Add the green onion and parsley and set aside.

  2. In the heated pan add 1 tsp of oil, onion and garlic and saute for 1 min then add the peppers and mushrooms. Cook until tender and stir occasionally for about 5 mins. Turn off the heat, add the spinach and stir until wilted.

  3. Preheat a non-stick pan on medium-high heat. Pour about 1 cup of the omelette mixture into a pan and make sure it spreads evenly by moving the pan around. Cook for about 2 to 3 min until you see bubbles and the sides are cooked. Flip over and cook for an additional 3 min.

  4. Assemble the omelette with the veggies and any sauce you like or just as is.

*You can sauté any veggies you like.

*I use a non-stick pan so no oil is needed but if you don't have one make sure to use oil so the batter doesn't stick.
