4 Ingredients Energy Balls

These almond balls taste light and are delicious. The almond aroma makes you want to eat more of them which means they never last long. They are also much easier to digest because of the pre-soaking of the almonds. These are the perfect snack or desserts for kids and adults.


4 INGREDIENTS ENERGY BALLS


Yield: 8-10 balls

Total time: 10 min


Ingredients:


  • 1 cup almond pulp

  • 1 cup pitted madjool dates

  • 1/2 cup unsweetened coconut shreds

  • 1/2 tsp almond extract

  • More coconut for decorating (optional)


Direction:


  1. In the food processor put all the ingredients in and pulse until well combined and the mixture is sticky.

  2. Roll about 1 to 2 tbsp of the mixture in your hands and then roll in the coconut shreds for more texture and flavour.

  3. Store in the fridge.


Tips:

*I recommend watching the video above for visual instructions.

*They store well in the fridge for up to 5 days and freezer for up to 2 weeks.

*Almond pulp is a by-product from making nut milk. One cup of almonds yields about a cup *Almond pulp is a by-product of making nut milk. One cup of almonds yields about a cup of pulp which is perfect for this recipe. Not to worry if you don't have exactly 1 cup as it will still work.

*These are much easier to digest as the almonds were pre-soaked the night before. I make these energy balls every time I make almond milk, as there is always the leftover pulp.
